When I go to see Mom, I always eat lots of cookies. I know she has old Edwards Coffee tins in her freezer with a variety of cookies. I side step the hermits, chocolate chip and bran muffins, and go for the peanut butter or ginger snaps.
The recipe this month is those same ginger snaps. By today’s standards of white-chocolate-macadamia-tahini-sea-salt-caramel-cookies, these ginger snaps are pretty boring. But then these designer contain-everything cookies are not comfort food and good for dunking.
You remember dunking, “lowering the biscuit into the tea and letting it soak and try to calculate the exact moment before the biscuit dissolves and you can whip it up into your mouth and enjoy the blissful union of biscuit and tea combined.” (You can thank Judi Dench for this quote in The Best Exotic Marigold Hotel.)
Forget your manners, two is never enough, four is just a start!
These cookies are easy to make, last decades in the freezer, are strong enough to stand a bit of dousing/dunking and listen quietly as you share tea with someone and contemplate life, discuss troubles or laugh about your latest escapade. (You know a man is somewhere in these conversations!)

We used these under the counters to store products. As you probable know they have a secure lid, and are easy to carry and clean. And I will say this quietly so as not to jinx myself, they are mouse and water proof. I don’t need another round of “bad things in threes.”
P.P.P.P.S. In the last round of “bad things in threes”, the third things was one of my pot lights burnt out and I couldn’t figure out how to change the light bulb. Youtube to the rescue and I am back to reading at night!
