Roasted Rhubarb


  • 4 cups rhubarb
  • ¼ cup sugar
  • 1 teaspoon vanilla paste
  • ½ orange


  • Preheat oven to 350 F.
  • Mix rhubarb sugar and vanilla paste.
  • Grate orange zest over the mixture.
  • Then squeeze the juice over the mixture.
  • Bake for 20 – 30 minutes until rhubarb is soft and lightly caramelized.

You can serve these over pancakes, ice cream, with yogurt or on their own.
