- 4 cups rhubarb
- ¼ cup sugar
- 1 teaspoon vanilla paste
- ½ orange
- Preheat oven to 350 F.
- Mix rhubarb sugar and vanilla paste.
- Grate orange zest over the mixture.
- Then squeeze the juice over the mixture.
- Bake for 20 – 30 minutes until rhubarb is soft and lightly caramelized.
You can serve these over pancakes, ice cream, with yogurt or on their own.
