Vegan Nanaimo Bars

Ingredients

Base

  • ¾ cup vegan margarine or vegan butter
  • ½ cup sugar
  • ½ cup cocoa
  • 1½ teaspoon vanilla
  • 2 tablespoons ground flax mixed with 2 tablespoons water
  • 2½ cups graham crumbs

Filling

  • 6 tablespoons vegan margarine or vegan butter
  • ½ cup nut milk
  • ½ cup vanilla custard powder
  • 3 cups icing sugar

Topping

  • 2 cups dark chocolate
  • 1½ tablespoons vegan margarine or vegan butter

Directions

  • Put all base ingredients except graham crumbs in a bowl.
  • Set bowl in a pan of warm water.
  • Stir until margarine has melted.
  • Add the graham crumbs.
  • Press into an ungreased 9×13 pan.
  • Cream together all filling ingredients.
  • Spread over base.
  • Chill until firm or place in the freezer for ½ an hour.
  • Melt the chocolate with the margarine and spread over base.
  • Chill until firm.
